Tonight was pizza night. Here’s how I made mine:
For the sauce (a killer recipe I discovered via my friend, Alexis), I chop about a half a cup of white onion, then add the onion with about three freshly-pressed cloves of garlic. I sauté this with about 1/4 cup of virgin olive oil until the onions become transparent-ish. Then I pour a can of crushed tomatoes into the mix (as well as a teaspoon of red pepper/ salt & black pepper to taste). Finally, I simmer until it looks, smells, and tastes incredible. Then I transfer a few spoonfuls to a pre-made pizza crust (I love garlic naan flatbread).
My favorite toppings are goat cheese and baby portobello mushrooms. Trader Joe’s sells “goat cheese medallions” that come in individually-wrapped one ounce servings. Perfect for only using what I need without having to worry about the rest drying out.
At this point, the pizza just needs about 5 minutes to broil in the oven – then it’s ready to be devoured.
Try it out, especially the sauce. – I’m serious, it is unreal.
